If you have a skillet ...

this is a good "tater" dish:
Thinly slice a medium onion and saute in a little butter until clear; add 1 bag tater tots or hash browns and cook gently until all sides of potatoes are browned. Remove and set aside; keep warm.
Brown 1 pound ground beef with three cloves smashed garlic; once meat is brown add 1 (juice drained) can Fiesta-style Ro-tel and 1 small box Mexican style velveeta, cubed; once velveeta melts, add potatoes back into dish, warm through and serve.

Simple's good. This is both, and easy. Might be a little garlicky for church...

My mother didn't keep real kosher while I wasgrowing up, only if there were some REAL Jews visiting the house, but...

She used to buy a bacon substutute called "Beef Fry."

Which do you think I preferred?

Hey, Laredo. I'm making the "tater dish" tonight. I put a spin on it. I warmed , not browned, the tater tots along with the onions. Cooked the hamburger/Rotel/garlic, layered the cheese on top of the warmed tots and then poured the meat mixture on top of the whole mess. I'm baking it in the oven right now. I'll let you know how it turned out by my GF is giving it a big

My favority quickie skillet dish is similar, but no tomatoes or cheese. Slice up some smoked sausage and fry it up with a sliced onion and a spoonful of chopped garlic. When the onions are sarting to soften up and the meat is starting to brown, add a couple of cans of sliced potatoes and fry until the potatoes are browned.

This sounds really good. I have only one question.
What is "Ro-tel"?? Maybe I must know it by a different name but that one; I've never heard.

Thanks for the info. I've used that in my chili recipes. I didn't realize it had a name .

I like the one with the lime juice and cilantro.
If you don't have Ro-Tel where you live use some "medium" Pace Salsa or Picante sauce.
