DUTCH OVEN (ALBINO) SQUIRREL STEW

DUTCH OVEN (ALBINO) SQUIRREL STEW

Source:

North American Hunting Club
"Celebrating Wild Game" p.130, Mary Ann Lecce, Collinsville, IL

Prep Time: 1 hour 45 minutes

2 squirrels cleaned and cut into pieces Dutch oven
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
3 cloves garlic, minced
2 large onions, chopped
4 cups water
4 beef bouillon cubes
1 large potato cubed
2 large carrots, diced
2 ribs celery, diced
2 cups frozen lima beans
2 14 1/2 ounce cans diced tomatoes
2 cups frozen corn kernels
1 teaspoon Worcestershire sauce
1 1/2 teaspoons sugar
3 tablespoons flour

Directions
Dredge squirrel in flour, salt and pepper
Heat olive oil and garlic in large Dutch oven and brown squirrel
Add onions and cook until soft
Add water, bouillon cubes, potato, carrots and celery
Cover and simmer for 1 hour
Add lima beans, tomatoes, corn, Worcestershire and sugar
Cover and simmer for 30 minutes
Mix 3 tablespoons flour with 1/2 cup cold water, stirring until smooth
Add to stew and simmer until slightly thickened
Season to taste with salt and pepper

Gheesh!

That receipe looks loaded with sodium?!?!

Or do the veggies absorbe all the salt taste?


Reason I comment is that I'm on a low-sodium diet (as apposed to a low-salt diet) and have to watch all the "sodium" in all the ingredients

(Canned veggies have lots of sodium in them, thus I have to grow my own or buy fresh from a produce market.)

Iwould be surprised if theres all that much sodium in 2 small albino squirel's

I wonder what dutch oven Dave could do with squirel.

Albino squirel The other white meat. It does have somewhat of a nutty flavor when cooked. Now a good stew requies a good wine or atleast a beer. Sounds like a cooking show in the making :lol:

Where can you buy squirrel? I'm a lousy shot with my BB gun.

1) Squirrel

2) Buffalo

3) Bufallo Testicles

4) Monkey Brains...cause I saw it on TV.

I dunno if I would put much stock in the recipe given by (PresTx82).
As one who hunted squirrels with BB-gun and .22 I am here to tell ya,
that two (squeals) as I call um, wouldn't fill the cavity of a sparrow.

Ira ... know you are game for most anything if your ready to eat
Buffalo balls, but if your gonna eat squeals you better come ready
to hunt and come back with a bunch of them varmints for the pot.

Why in my opinion you could put 6 to 10 of them varmints into that kettle
and you might get the same amount of soft fleshy skin meat as one
chicken carcass has on its ribcage after one took all the substantial meat
off that foul. Why two of them squeals in a big DO pot would be like tying
a string to a chicken carcass and dipping it into the hot broth and veggies
and pulling it out about 10 times. The aggravation of the small varmint
bones would be what you would be left with and the mental anguish of
killing a small defenseless woodland critter.

This gastronomic event would be known as "BONE-appétit"

Ira, I've had the first two and have no intrest in the second two. I'm told that my Grandfather used to eat the squirrel brains (don't know if that's true or not). I once fed squirrel to and unsuspecting woman who thought it was quite good until I told her what it was. :lol:
I once attended a BBQ that consisted of elk, antelope and alligator (which had a fishy taste to it).
