Any got a good SPAM recipes?

We've done the Spam & Eggs for breakfast , that is sliced and browned in skillet with eggs and hash browns... Petty mundane...

And we have cubed up Span and put it into Mac & Cheese, again its good but nothing to get excited about... Basically its a "quick meal"...

What have you tried?

I think I'm with Mary K... I read the label on a can of Spam once and it had a toll free number to a cardiac surgeon? So I didn't buy it. :twisted:

You poor souls need proper enlightenment.

The only way to salvation is to attend Spamboree, held in Oct this year at Guajolme Park, North of San Diego, CA.
All sorts of wonderous recipes show up for the Spam contest every year'
You would be amazed.

Alas, Spamboree is full this year but visitors are always welcome.
Gage shows up but usually takes pictures of all the trailers and not the food.

I get the Albertson's store brand "Light", and I use it a lot of different ways.

The one that always, always got good reviews (I had a job where I worked for food,
and had to bring my own) is very simple:

One box Rice a Roni Wild Rice Pilaf
One box Rice a Roni Vegetable Pilaf
Two cans luncheon meat
One tall can pineapple slices
One small can apricots
One small can green chiles, roasted and chopped
One can mandarin oranges
One bell pepper, seeded, finely diced
Water
Salt
Pepper
1 2/3 tbsp (dried) Chopped onion
2/3 tsp Minced garlic
2/3 tsp powdered ginger
2 qt plastic measuring cup

Microwaveable casserole with lid
Strainer

Carefully open all cans. Drain all juices (except green chile), saving juice in measuring cup.

Combine juices. Add enough water (up to 2 cups) to equal requirements on Rice-A-Roni
boxes.

Carefully spread dry Rice A Roni in bottom of pan. Microwave on high 1 minute to crisp
noodles. Pour in liquid. Add apricots (diced or rough chopped), bell pepper, garlic, ginger,
green chile, onion, pepper and salt. Cook per package directions; FIVE MINUTES before it's
done, add the diced luncheon meat and drained pineapple. Stir well and continue cooking,
COVERED, until done; test -- if rice or noodles are underdone, cook an additional 2 minutes
at a time until desired doneness is reached. Rest dish uncovered five minutes; top with
oranges and serve casserole-style.

Variations:
Four cheese flavor rice mix with Spam (omit apricots, green chiles, pineapple and oranges;
substitute canned asparagus and add more water)
Broccoli-cheese rice mix with Spam (omit all fruit; increase water and use 2/3 cup milk in
cooking liquid)
Spanish Rice flavored rice mix with Spam (substitute canned diced tomatoes for pineapple
and oranges for best results, and use chipotle chile powder instead of ginger)

Will feed about six to eight persons for lunch (can be made into burritos for cub scouts.
Also, if you substitute garlic-chicken flavor rice mix and canned light meat chicken, you can make a good
Dutch Oven Scout meal. For Cub Scouts I left out the chiles) or more if you add a can of
drained rinsed black beans to the casserole at the same time as the SPAM.
Mopar's what my busted knuckles bleed, working on my 318s...

Laredo... That recipe actually sounds quite good... Hmmm, I've never tried Light Spam? Maybe I'm learning something here? ;)

Funny that you mention Spam. We just had Spamarama this past weekend. I didn't go because of work.

We are going to Vegas in a couple of months, and my friends decided to see Spamalot

SPAM sponsors contests at State Fair competitions all over the country to generate recipes for its annual competition--kinda the SPAM version of the Pillsbury Bake-Off. The prize money is usually pretty good (for a cooking competition) but I gave up entering a few years ago because I just really don't like the consistency of SPAM, whatever the variety. I have friends that have actually won the local competitions, though. Things like pineapple and chiles (just like the recipe posted) usually show up in the prize-winners. It's basically a drive to see how much you can make SPAM not taste like SPAM 8)

Stayed with my Aunt when in college. She frequently made the following which I still make from time to time. Very Simple and I like it.

Spam sandwiches:

Bread slices of choice (I like 100% whole wheat)
2 slices Spam per sandwich (just fits a slice of bread)
2 slices pineapple rings on top of Spam (drain and pat dry)
Cheese of choice on top of pineapple rings. ( I like old fashion Hoop Cheese)

Put in oven and melt cheese.

Condiments of choice on bread (Mayo!!)
If it's not broken, you're not trying hard enough.

I highly recommend Spam chili. Almost any chili recipe can be converted so try your favourite.

I have also had Spam musubi (sushi) and it is suprisingly good. Just depends on whether you want to make sushi rice while camping. Easy to do though.

For breakfast try Spam hash. It has been a staple of campsite for ages.

You can google the above to step by step recipes, but I can give you specific recipes that work if you end up confused.

Fried Spam with Potatoes O'Brian is good. We like it on baked beans too. Just use your favorite bean recipe and put thin slices on it.
