My favorite wood is Hickory. Here in NE Kansas, we have got Jack and $hit for Hickory and Jack is out of town!!

I have to gather sticks down in Missouri when I go canoeing and smuggle them back here.......... :x !

Cherry is nice, too. I have some chunks of that.......

Heh, I've got about 3 acres of Hickory on my property in Missouri :p

I like hickory too, but it doesn't mesh well with brisket IMHO.


Of course BBQ purists will say mesquite is the *only* wood for brisket.

2 hours of apple smoke, spraying with a mix of cider and your favorite BBQ rub mix will add the perfect zip :)

I don't care much for Mesquite smoke. I like cherry and apple, but as I said before, I'm really hooked on Pecan right now.

I smoked a brisket in the 4 of July for 7 hours at 150 - 175 degrees. I rubed my meat with Emeril's seasoning and coarse sea salt. Turned out great. Now if I can figure a way to get this thing in my TD for travel.

We're trying to figure out how to bring ours too! I have a smaller cabinet smoker that will fit in the truck so that may be the ticket.

I knew that would get a rise out of someone. I always ask for volunteers when it is time to rub my meat. Soon followed by "the look" from my wife telling me I'm gross.

One of our friends said her husband got her "body butter" as a gift. Perhaps that would work. Or Emeril's Essence seems to work on all meats before grilling. Whichever way you go let me know if I can be of assistance. I'm always willing to help a friend in need. 8)
