Dutch Oven Enchiladas

Dutch Oven Enchiladas Casserole
1 1/2 lbs Hamburger
1 onion
1 green pepper
peper jack cheese grated
colby cheese grated
2 small cans Old El Paso Red Enchilada Sauce

Brown 1 1/2 lb of hamburger meat with onions and green peppers. Then layer Corn tortias then meat, Encilada sauce, and cheese. Then repeat the procedure untill meat is used up. The top layer is finshed with Tortias sauce and cheese. Baked in a 12" dutch oven utill chesse melted an bubbling.

Big thanks for sharing the receipe Phil, I made the enchilada dish tonight and it was delicious. Even my wife was raving over them (she pretty much like any thing that I have cooked out the DO as long it is not to hot or spicey). :thumbsup: :thumbsup: :thumbsup:

The recepie says 2 cans Old Elpaso Enchilada sauce it should have said 2 small cans or 1 big can. I hope it was not to souppy. My cooking and recepies kind of mix with the dump stir and taste method of cooking. I guess it is fine for DO cooking in the woods. I am sure glad you all enjoyed it. Let me know if you come up with some interesting variations of it.

This was great. We really enjoyed it. I cut the corn tortias in to 4ths. It was much easier to serve.

I did use 2 small cans of Old Elpasco but I substituted the cheese, I used montery jack and mozerelli cheese.

Naaa!! I was to busy drooling while waiting for the dinner to cook. :lol:
I need to replace the battery in my camera or get a new camera because my camera keeps going dead when I need it. :(

My mom makes an enchilada casserole very similar to this but it also has chopped black olives (straight out of the can) in it.

For those of you that like olives, might be worth the addition!
