I posted this recipe earlier in a different thread. Its really yummy! And now its award winning! I took first place in the Ice Cream Freeze Off at the Seminole County Fair this last weekend! I won $60 and bragging rights! :lol:

State Senator Harry Coates was the judge, and I had some good competition. After the contest, everyone can buy a bowl for $2 and can sample any or all of the flavors. It's fast becoming the place to be on the first evening of the fair.

Strawberry Sundae Ice Cream

eggbeaters = to 4 eggs (* See note below)
2 1/2 cups sugar
1 16 oz. pk strawberries (fresh or frozen, mashed)
1 or 2 ripe bananas, mashed
1 20oz can crushed pineapple
1 cup chopped nuts (we prefer pecans, but walnuts, almonds, anykind)
1 16oz can strawberry soda
1 15oz can sweetened condensed milk
1 15oz can evaporated milk
2 cups heavy whipping cream
2 cups half and half

In a large bowl, beat eggbeaters until foamy. Add sugar, and beat until sugar is disolved. Add remaining ingrediants and stir well.Pour into ice cream freezer and process. Makes about 6 quarts.

* Egg beaters are a pasteurized egg product. If you use these instead of raw eggs in ice cream mixtures, you don't have to heat the mixture to pasteurize the eggs.

So Eggbeaters don't have the egg yokes so they're better for you too... :thinking:

Way to go, Karol...!
I did manage to get four of my eight entries to the NY state fair last week...and the judges didn't hate them, but they didn't like them *enough* either. Some years you're the baseball, and some years you're the bat! But never undersell those bragging rights. They last for years.

The contestants keep asking the fair committee to add an 'ice cream' category, but they haven't yet. Maybe next year (fingers crossed)

Meanwhile...you might want to consider entering your recipe in the Eagle Brand sweetened condensed milk contest if that category shows up in your state fair. First prize at the state level is usually around $250...and a shot at the national contest. You might also be able to enter over the web. Check it out--and congrats!

Karol, I made this tonight for men's bible study. They all said it was the best ice cream they had ever had. It was excellent! Thank you for posting the recipe. It is a keeper.
