I haven't tried these, just found the link while searching waffle iron history. The recipe below is from the linked website.

"Pumpkin Waffles Recipe

I made these yesterday for breakfast. Although they are a little time consuming to make if you are hungry at the moment you make them, they are so very much worth it. This recipe makes 12 waffles. - from Gourmet Magazine.

Ingredients:
2.5 cups of flour
1/3 cup packed light brown sugar
2.25 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
4 eggs
1 cup whole milk
1 cup well-shaken buttermilk
1 cup canned solid-packed pumpkin
3/4 stick (6 Tablespoons) unsalted butter, melted
vegetable oil for brushing waffle iron

Accompaniment: Warm pure maple syrup (accept no substitutes!)
Special equipment: a waffle iron (preferably nonstick)

Preparation:

Preheat oven to 250 degrees and preheat waffle iron.

Sift together flour, brown sugar, baking powder, soda, salt and spices.

Whisk eggs in a large bowl until blended, then whisk in milk, buttermilk, pumpkin, and butter until smooth. Whisk in dry ingredients just until smooth.

Brush waffle iron lightly with oil and spoon batter (about 2 cups for four 4-inch Belgian waffles) into waffle iron, spreading quickly. Cook according to manufacturer's instructions.

Transfer waffles to rack in over to keep warm and crips. Make more waffles in the same manner.


Now, I have to say, these were DELICIOUS! It made our entire house smell wonderful! The only reason it is time-consuming to make is because the recipe is so large. Of course you can divide the recipe in half and it won't take as much time to cook so many waffles."

Kevin these sound really good. I think I will try and cut it down by 1/4's. Even 6 waffles are too many for Kenny and myself.

Waffles

I just heard of a recipe for pumpkin pancakes. Pumpkin waffles sound delicious too! Will have to give these a try! :)
I don't want to get to the end of my life and find that I have just lived the length of it. I want to have lived the width of it as well ;)

:D Let me think. I love pumpkin pie, so pumpkin waffles would probably work too. Wonder if I could put whipped cream on them, like I do my pie. :thinking:

Pumpkin Waffles

I have been making pumpkin waffles for years
Just add canned pumpkin and the spices to waffle mix from scratch.

These were very tasty.
Sweet potato is another variant that works well IMO -- you need pureed sweet potato equal to the pumpkin called for, plus about 1/8 cup; put it in a fine strainer or cheesecloth-lined colander and let it 'drip out' for about 45 minutes before you add it to your batter (or you could reduce the other liquids in your batter to make up for the juiciness of the sweet potato puree.)

I LOVE waffles and I LOVE pumpkin, so Kev, will you whip up a batch for us to try at the IRG??? Pretty please?? Top waffle could be yours with the right recipe!

Pumpkin Waffles

I have been making pumpkin waffles for a few years now .

All I do is make my grandmothers waffle recipe
2 cups flour
2 eggs beaten
2 cups milk
2 teaspoons baking powder
2 tablespoons sugar

mix well

add 1/2 stick melted butter or margarine

Then add the can of pumpkin pie and just the spices
