Anyone got any good quail recipes? I was given about 6 or so by my barber. My wife pinched her nose and said, "NO WAY AM I EATING THOSE THINGS!" :thumbs down:

So that leaves more for Bobby Dub! :twisted:

I cook them like I would any other decent sized game-bird.

I cut through the backbone, and flatten the bird out. I also remove the wingtip.

Make a marinade to taste of Orange Juice, garlic salt, pepper, Herbes de Provence, and a coupla Tbsp. olive oil.

Let the birdies soak in it over night.

I cook them on the grill. Run 2 skewers thru each flattened out bird to form an "X". Go in thru the breast and out the thigh/leg on the opposite side. Do the same to the other side of the bird. This will help hold them bird's shape and also help it cook pretty quickly. Cook 'til done, flipping once (usually 7-8 minutes/side).

This works well on cornish game hens as well. Don't know about pheasant, never tried it.

Take the breast and wrap it around a chili pepper. Wrap with bacon and hold it together with a toothpick. BBQ. When done, unwrap and throw away the quail and eat the pepper and bacon. An old Texas recipe, works good for dove too.

Quail is tough to cook, since they have so little fat. Here is my suggestion...

Take the quails, and wrap them in bacon before cooking. Lots of bacon. How can you possibly go wrong with bacon?

Of course, if you hunt quail in one of those hunting resorts that Dic Cheney shoots his friends in, the quail will probably have more fat, since they are raised in cages and have their wings clipped. :lol:

...first ya gotta make a roux :D ;) ...wrapping them in bacon or stuffing them with a sausage stuffing will work pretty darn well for grilling...we usually just "breast" them, and then cook them down in a brown gravy and serve over rice............
