...Nighttimes, this resuts in a smoked and roasted pig that is hard to beat...if you ever have one done thisaway you will throw "rocks" at the next person to suggest roasting in ground...many people around here keep a roasting set up like I described in the backyard...we do occasional do one in a box...called a coon-ass microwave around here...it is OK but people usually say, "it would have been better done cochon de lait style". The festival I mentioned is called the "Cochon De Lait Festival"...it means "milk fed pig"

It all depends on the preperation of the meat and if it is male or female. The males are a bit gamey compared to the female
