Easy Peasy tomato salad

This one is so easy it almost doesn't qualify as a recipie. Trust me though, it's absolutely delicious!

You will need a shallow container, something similar to a casserole dish. You don't want anything deeper than a couple of inches. A lid is helpful, although anything to cover the dish with (saran wrap) will work.

4 large tomatoes, sliced thick
8 oz crumbled or diced mozzarela cheese
1 large clove of garlic
One bottle of italian dressing

Slice the tomatoes and arrange them to lay flat in your dish. Cover witht he mozzarela. Peel and crush the garlic and distribute over the pan. Cover with italian dressing. Cover and let stand for at least two hours. Refrigeration is nice, but not necessary.

That's it! I serve this with a slotted spoon to let some of the italian dressing drain away. This is a great way to get rid of that mountain of fresh tomatoes you get deluged with in early fall.
