Turkey Brine? need help!

Need help, Turkey Brine? I want to brine the turkey and dont know how muck salt to use.

This one is very close to what I have done in the past. Before I cook the bird, I generally place one or two fresh onions in the body cavity. Then I liberally coat the outside with olive oil. Bake until 160 internal temp, or the legs are loose in the socket.

Good stuff.

Kirk this is from Foord Network and is Alton Browns recipe and video. My best friend did it last year and it was excellent!

What I ended up with is 1 cup of salt and 1 cup of sugar. 20 lb bird in five gal bucket. The liquid was about 2 gal. worked great.

This is a great trick for camping, too. I've put pork chops or chicken into a brine with ice and then packed it in a small lunchbox sized cooler. It makes the chops or chicken tasty and moist when putting on the grill or cooking in the dutch oven. And the brine, since it's salt water, keeps things cooler longer.

A quick cheat is to make homemade ice cream while camping, then dumping the meat into the salt water the ice cream was made in. Add some sugar and your favorite spices and you have a simple easy brine. If the meat was frozen when you threw it in the brine, it will be ready for lunch the next day. And since salt keeps things preserved, adding a little ice and your meat won't spoil. I ended up doing this on a trip when we lost all of our refrigeration. Worked like a charm.

Check you tube. Alton Brown of good eats fame has made it there, and his videos are really goof proof, except his cheesecake :). That needs a little more time and heat than he claims :)
