An Australian recipe for corned beef

Place meat into a large pot and pour over sufficient ginger beer to cover. Bring to the boil and reduce heat to simmer. Make sure to remove the scum from the broth periodically. Simmer for approximately 2 hours (depending on the size of the meat).
Preheat the oven to 200 deg C (400 deg F). Remove the meat from the pot and place on a wire rack in a roasting pan. Spread orange (or similar) marmalade over the meat and place into the oven to glaze (approx 15 minutes).
Remove and slice. Serve with some reserved ginger beer from the pot.
Good with the usual vegetables.
