stuffed chicken breast

If you should want an elegant meal with little to no effort you might give this a try.

Take large boneless skinless chicken breast and rinse and split them not quite thru and butterfly them. You can season them with your favorites at this time.

I then mix up a box of stove top stuffing with a large can of chicken noodle soup and mix by hand kneading the mix by squeezing and stiring this concoction. Next take a small snowball sized ball of the mix and place it on the butterflied breast and flatten it a bit.. Then wrap them with heavy duty foil. I add about 2 ounces of beer or white wine just as I seal the foil to prevent burning the chicken. ( Water works too).

I then place them on the grill and cook for 30 to 45 minutes. At the end after checking to assure the chicken is done I remove all from the foil and grill mark the chichen while browning and crisping the stuffing topping.
