Camp oven Beef Pot Pie

1 1/2 lbs beef, cubed Topping: 2 cups baking mix
1 lb potatoes, cubed 1 cup milk
1 1/2 cups dry red wine 2 eggs
1/2 med onion, chopped
1 cup mushrooms, sliced or chopped
1 cup carrots
1 TBSP flour
seasoning of your choice.

Heat dutch oven with a small amount of oil (enough to coat the bottom). Saute onions and mushrooms. Add beef and season as desired. Whisk flour into wine then add to oven. Add potatoes. Simmer for about two hours. Add carrots (and any other veggies you want) and continue to simmer for another hour. Prepare topping and pour over top of the goodness in the pot. Top the pot with coals until topping is browned (about 20-30 mins)

This got rave reviews as lunch at this weekends Scout campout. You will have to experiment with times and coals as I just set the pot next to the campfire and rotated the pot every so often. the coals on top came from the fire. I used a chuck roast for the beef and a semi-dry red from a local winery. I also used frozen mixed grilled veggies from Aldi.

You can also use white wine and either chicken or turkey if you don't want to do beef.
