Anyone else hooked on Greek/Turkish coffee??

A few months ago I stopped by Jimmy the Greeks cafe and out of curiosity had him make me a cup of Greek Coffee. Never ever drank sweet coffee before - now I'm hooked.

Got my own Ibriks and fine ground coffees. Neat way to make coffee while camping also.

I've never had it before, but I love fine coffee!

What is the process for Turkish/Greek coffee anyway? The cup in your picture sure looks tasty!

The Greeks - yes :shhh:
The Turks - no

But they are careful not to get any toe jelly in the grounds.

For one cup (demitasse)

Measure a demitasse of water into the ibrik.
Place ibrik on medium high heat.
While water is room temp add 1 tsp sugar - or more
Using fine ground Greek/Turkish Coffee spoon in 1 tsp coffee
Making Greek coffee stir the grounds in till wet (Turkish - don't stir)
When the coffee foams up - BEFORE it boils remove from heat.
Pour foam and coffee into the demitasse. let it settle for about a minute
Enjoy

Turkish is slightly different.
After the first foam remove from heat and stir
Return to heat and foam again
Repeat for 3-4 foamings
Pour, let settle and enjoy.

Works for me.

Warning - do not leave unattended  It will foam over and create quite a sticky mess.

That last sip from the cup just before you reach the grounds (grinds) will put hair on your chest!!! :wacky
