Quick easy meals - I do not camp to cook! LOL

Looking for quick easy meals, throw in cheap and I will send you absolutely nothing but my love because I am cheap! LOL

1 pan meals would be great as well. Less clean up time.

Here is one I use now.
Quick easy Jambalaya, use whatever meats, ingredients you like or omit what you do not. only thing that really matters is the amount of liquid to the amount of rice

What You Need
1 Tbsp. oil
1/2 lb.n sausage links, could substitute chicken or do both
1 onion, chopped
1 can (14 oz.) diced tomatoes, undrained
1 can (14-1/2 oz.) chicken broth, I use powered stuff and water
2 green/red/yellow pepper, chopped, I use 2 colors
1/2 cup Barbecue Sauce, spicier if you like or milder it is up to you. I like kraft original.
1 lb. frozen cooked shrimp, thawed
2 cups instant white rice, uncooked

Heat oil in large skillet on medium-high heat. Add sausage; cook and stir 10 min. or until sausage is no longer pink. while sausage is cooking cut peppers and onion. remove sausage and cut into 1/4" slices while you are cutting Cook cut up peppers and onion
Add all the ingredients; mix well. Bring to boil; cover.
Remove from heat; let stand 10 min. Stir gently before serving.

I make this every time I go camping... it's the cumin that makes it so good!!!

My wife does a lot of one pan wonders on our cooking channel. If you find ones with EZ in the title they usually will fill the fill. You can click on the icon below for Outdoor Cast Iron Cooking and find a number of recipes we cook there.

I precook most items except those that will be grilled. Put them in food saver bags and freeze. Pop the bag in boiling water and serve. No cleanup either

Precooking is ok but usually when we go camping I do not have a lot of time before to prepare.

I usually eat uncooked vegetables like Broccoli cauliflower and carrots so all I cook is a bit of meat. If I can find a nice fatty roast or cheap meat, cut into strip and roast over a fire hot dog style.

There are a couple of canned meals that I always carry in my trailer. I keep them not only because they are easy but also because they are always ready and keep without refrigeration; thus, they are there for emergency bug-outs or if you want or need to stay a day longer at camp than you had originally planned. They are also handy when you get to camp, tired from the drive, and it's dinner time. Probably no surprise, both are gluten and dairy-free.

One is a can of Dinty Moore Stew, which I combine with a drained can of green beans and a half teaspoon of basil. The basil is optional; but, it really takes away the ready-made "can" taste. Just heat and eat. It lasts me for one meal because my dog and I share this (in separate bowls). :lol:

The other heat and eat meal, chili, requires opening three cans, and adding cooked meat is optional. I find that I don't need nor miss the meat in this one. You need a can of Mexican-style tomatoes, a can of either black beans or kidney beans, drained, rinsed, and drained again, and a can of pinquitos or a can of seasoned chili beans, including the sauce that comes with them in the can. Add whatever seasonings you want, chili powder, cumin, hot sauce, salsa, etc and serve with corn chips or corn tortillas on the side. I sometimes mix in part of a jar (about 6 to 8 oz) of LaVictoria Salsa Verde. If you don't want to be bothered with the corn chips or tortillas; or, if you are storing the chili for an emergency meal, add in a drained can of corn to the chili when you're mixing and heating everything together on the stove. (The corn, mixed with the beans or the corn chips or tortillas eaten as a side to the chili makes a complete protein so you don't need meat.) Of course, you can purchased ready made canned chili; but, I don't think it's quite as good tasting. (No, my dog doesn't get to share this one; so, it makes enough for two meals.)

Of course, I prefer fresh food; but, at times, canned has its advantages.

Costco frozen tamales. (Thaw them the night before your trip).

Steam 'em on the stove for fifteen minutes. MMMMMMMMM-GOOOOD! :thumbsup:

In a pinch, you can just use an Italian seasoned diced tomato and omit the spices.

Add a side of some Italian bread if you wish.

Personally I like to cook, especially when I am camping. I am also a big fan of one pan meals ( I call it hamburger helper). I make a couple of my own versions from scratch, but the real thing isn't too bad.

My wife makes "Egg in a hole" for breakfast and it's delicious and easy!

You need:
A pan
Bread
Butter
Eggs
Salt and Pepper
Bacon Bits (if you like)
Any extras like breakfast sausages

Butter the bread on both sides and cut a hole in the middle. Throw the bread in a hot pan, medium heat, and crack an egg into the holes. Add salt and pepper to taste, and bacon bits. Flip once. Don't forget to throw in the pieces you cut out into the pan, they make delicious little crispy treats. You can also throw some small breakfast sausages in there as well around the bread if your pan is big enough. If you like eggs over easy, cook till the whites are cooked and bread is toasted. If you prefer cooked yolks, just fry for a bit more. Takes practice to get egg and toast both done right, you just need the right temperature.

One guy, one can of Wolf Brand Chili with Beans, heat, pour over Fritos, sprinkle shredded cheese on top while hot, in a paper plate, plastic spoon, one dirty pan to clean. Ronnie
