Just about any meat and veggie combo you like to eat can be put in foil on the grill.

I cook fish this way. A slice of lemon, pat of butter and some salt and pepper.
Easy

We did it last night, potatoes/onions/butter/salt / bit of water/ pepper, wrapped and put on side of fire, rotated once or twice, good stuff, in the past, I've put different meats in, different seasonings. Always good

I think you could probably adapt these to foil on the coals:
