Crab or Lobster Stuffed Jalapenos

Postby Guy » Fri Feb 24, 2006 11:41 pm

Dear All,

Just thought I would contribute a recipe for:

Crab or Lobster Stuffed Jalapeno Peppers

The Ingredients

12 large jalapeno peppers
4 ounces crabmeat or Lobster meat, well drained
1/3 cup minced red onion
1/4 cup minced green bell pepper
1/4 cup mayonnaise
1/2 cup all purpose flour
3/4 cup of your favorite beer
All purpose flour for dredging
1/2 avocado, peeled, diced
1/2 cup mild salsa, drained
1 tablespoon mayonnaise
Corn oil (for deep frying). Note: If you go to a natural food store and get the all natural virgin corn oil you will never go back to the other. It also is good for you.)

The Preparation

Cut Jalapenos lengthwise in half, leaving stems attached. Seed chiles. Place chiles in heavy medium saucepan. Cover with cold water and bring to simmer. Drain. Repeat process. Dry Jalapenos with a paper towel.

Combine crab or lobster, onion, bell pepper and mayonnaise in little bowl.

Season with salt and pepper. Fill Jalapeno cavities with crab mixture. Press Jalapeno halves together to compress filling. (You can prepare this up to six hours ahead just cover and chill.)

Place 1/2 cup flour in bowl. Gradually whisk in your favorite beer. Let stand 30 minutes.

The Cooking

Heat oil in heavy deep pot to 375°F.

Whisk batter to smooth consistency.
Dredge jalapeños in flour. Holding stem end, dip into batter to coat completely.
Deep-fry in batches until golden brown, about 3 minutes. Using slotted spoon, transfer jalapeños to paper towels and drain. Combine avocado, salsa and mayonnaise in small bowl. Season to taste.

Serves six people or two Teardroppers

Dear Guy...this sounds "slap ya mamma good"...one problem though is the salsa...'round here, we would haveta import "mild" salsa from someplace like NYC, 'cause we just dont have it down here...can I use just our regular "hot" type of salsa...

Dear Jack,

You sure can. I was going to put the real one in but thought I would trim the recipe for the milder folks, cuz the others were going to disregard it anyhow.

A nice hot Mango salsa would do this proud. It is what I use.

What was the episode? Twilight Zone, maybe? Where the aliens came down, pulled a few people on board? They had a manual "How to Serve Man"?

They things you guys try to do to Ira......it's mean I tell you, just plain mean.

I'll take my portion rare.

How the heck did I get pulled into this thread?

And why the heck does Guy's instructions say "cut chiles" when a Jalapeno AIN'T this kind of pepper?

I kept going back to read the ingredients to see if I missed anything!

Hey--this fascinates me. Lobster or crab stuufed jalapenos. But if you're looking or a reason that the Arabs hate us, look no further than here.

They're also pretty jealous of our nudie bars.
Here we go again!
