Jamaican Jerk Chicken

We typically make this at home, the day before we set out for our camping trip. Then when you get to camp, all you have to do is grill it up.

Jamaican Jerk Chicken

1 large Onion- chopped or sliced
1/4 cup white vinegar
1/4 cup vegetable oil
3 tablespoons sugar
2 tablespoons thyme
2 tablespoons paprika
1 tablespoon red pepper
1 tablespoon salt
1 1/2 teaspoon nutmeg
1 1/2 teaspoon allspice.

Put in a ziplock with chicken parts, Marinate in fridge for 8 hours minimum, 24 hours best. Cook on grill. Of course you modify to suit your taste. Add more or less pepper, salt, oil, etc.

Yeah mon!

I cheat and use a pre-packaged Jerk sauce. Tastes just like the Jerk that I get at the West Indian Restaurant. Works good on pork too.
