DO Chicken Pot Pie

Postby TomS » Sun May 21, 2006 6:20 pm

Tonight I made a Dutch oven chicken pot pie. This is one of my favorite DO recipes. It’s a nice one-pot meal.

Image
I started by cutting up 2 chicken breasts, seasoned them with tyme and browned them in olive a 10 inch Dutch oven.

Image
While the chicken was browning, I mixed together 1/3 cup of chicken broth, 2/3 cup of cream of chicken soup and 1 10 oz package of frozen mixed vegetables. I added the mixture to the browned chicken.

Image
I put the lid on the oven and baked the chicken and vegetable mixture for 15 minutes.

Image
I checked the thickness of the mixture and added some corn starch to thicken it.

Image
I opened a package of Crescent roll dough and unrolled it. I took the triangular pieces of dough and arranged them over the top of the mixture.

Image
About this time, I turned around and saw a nasty thunderstorm approaching from the southwest.

Image
I had to finish my masterpiece in my kitchen oven.

Image
After 20 minutes, it was done.

No martini tonight. I’ve got to work tomorrow.

Hey Tom,

Were you cooking that in your Bar BQ grill first, or open camp fire before you brought it in the house?

HI Tom,

Good job on that D.O. chicken pie!! It looks yummy!! Did you dredge the chicken pieces with flour before you browned them in the olive oil? Or did you just leave them "au naturel"? It looks like they have flour on them in the first picture.

What a great idea to use crescent dough for the crust!! That is a handy tip I will remember. I may even try it at home. ( I usually make mine from scratch, roll it out with a rolling pin, cut it in strips, etc. But this is a real timesaver and will come in handy on a camping trip---with or without the teardrop  )

Thanks for sharing!!

Blessings,
Cindy

Pres - I started cooking it outside with charcoal over the cinderblocks as shown until the storm chased me inside.

Steve - Count again. I have 14 coals on top (10 around the rim ad 4 in the center). I put 7 coals underneath. According to the guides, that'll give you 350 Deg. F in a 10" DO.

I think I'll make lasagna at Fish Creek.

Cindy - I did not dredge the chicken in flour. I just sprinkled them with tyme before browining in the olive oil.

Thanks for the kudos everybody!
