The ones I made at the IRG were not mandolin. I bought bags of cubed potatoes. Much easier when camping. Tastes the same... good!
In fact, I just bought the supplies to make some more.

My wife doesn't eat jalapenos--that's the problem. But I think if you make it in a large enough pan, you can do a kind of a half and half thing, so I'm gonna try it with the peppers and bacon.

I don't own a mandolin--they scare the hell out of me--but I always cut the potatoes as thin as I can. To each his own, but I guess it's basically the blue cheese, eggs and cream that make the dish--and you can take it from there, adding what you want.

I posted this one because the first time I tried it, it came out great. And aside from french fries, baked potatoes and stuffed potatoes, what OTHER potato recipes are out there? (Aside from potato salad.)

Great recipe though, Ira - especially with bacon! But jalapenos in blue cheese potatoes? Nah. Save 'em for the chili...

The $30 model works fine. Keep 'em clean and they'll last a long time. Nothing makes better slices of onions and tomatoes for sandwiches -- they meet and beat the "Ginsu slicing knife" promise. Seriously.

Ira -- I wouldn't put jalapenos in your potatoes; they're the wrong kind of heat for blue cheese. I might try a big pinch of cayenne. On the bacon, use mesquite-smoked (applewood smoked or maple are too sweet for this!!).

You might think about peeling and finely dicing a small onion among the potatoes, too.

This is a really good recipe you've given us, and I'm obliged to you for it.

I was trying to be polite about the jalapenos--I didn't think they were would really go with this. But that bacon sounds GREAT.

Gonna do more food shopping after work for the hurricane, so I'll make sure I get all the ingredients. I want to try it in my Brinkmann propane oven, what I'll be using to make it when camping if I don't become a true DO convert.

Glad you like this one. I think I got it from Emeril a long, long time ago.
