MIGAS

specially when served on a nice warm tortilla

start w/ el disco and fry up a mess of sausage, bacon or chorizo

slide that up the side and lightly saute peppers and slide them up the side

next lightly saute the onions and slide them up

add oil to what is left in the bottom of el disco and fry up a mess of corn tortillas cut into postage stamp squares sliding them up as they get done

add a couple beaten eggs/person to the remaining grease/oil and as they begin to firm up slide all the stuff around the top back into the mix

add salt, black pepper, grated cheese and FRESH chopped celantro to taste

serve wrapped in a nice warmed flour tortilla like a burrito

they can be wrapped in foil for keeping warm and eaten w/o dirtying up any dishes :thumbsup:

only 1 pan, a knife and wooden spatula to wash :)

2 weeks ago we fed 30± Lincoln New Mexico State Monument park rangers & volunteers from one large batch

I pre-bake a couple quiches to pack in the cooler. Plenty of bacon or sausage, onions, spinach, cheddar.....
Cut off a few slices and fry them in a cast iron pan with a slab of butter.

Sadly,

Oatmeal + Hot Coco and then a couple granola bars eaten along the trail as I stumble along in the darkness!

When its raining, though, Maple baked beans (usually canned!) + scrambled eggs and a sausage or two.

Marcia and I enjoy our little trailer best when we keep things simple. We generally have oatmeal and coffee in the mornings, with berries and yogurt...its quick, little clean up, and doesn't take up much room. Sometimes we will throw the griddle on the Coleman stove and have pancakes and bacon with our coffee. We keep a Rubbermaid quart bottle with a premeasured amount of pancake mix in it so you just add water and shake.

Actually my doctor is pushing me to use the new Atkins Diet and add "Fasting" to it to improve my diabetes numbers. And it is working. So what you say....well one of the techniques applied to it is to skip meals. To "Fast". And for me, breakfast is one of the meals skipped when I Fast. It is working, my weight and blood numbers are getting much much better. So breakfast in camp for me can be very easy now and without the anticipated hunger pains. :thumbsup:

I'm not Bill, but here is the one the wife and I make. We make in our Dutch Oven using same amount of charcoal we do for our peach cobbler. Go by smell when cooking. We've adapted several recipes to our DO, some with great results and some not so much, bull all edible. This turned out good.

After rereading, I thought Bill said Peaches and Cream. My bad. This one does NOT have cream cheese. It would be very easy to adapt though. Sorry about the confusion.

These recipies are very tolerant. Just dont get too much liquid, dont undercook, and it will get raves. You could plop a can of drainedsliced peaches in the plain recipe, and dabs of ricotta, and it would be great.

I like to use a disc and do taters, onions, bell peppers, and chorizo. When it's getting close toss in scrambled eggs and use the sides for the tortillas, toss on a little cheese and roll your own burrito. I usually only do this with a crowd since it feeds a crew, but can be packaged to do in a CI skillet for fewer.

I was making Bee's & Gee's one morning when Bob Henry decided to "help" by adding the left over veggies from shish-ka-bobs (peppers-onions-mushrooms). It didn't look very pretty but it definitely was very tasty. However I can't say that was my favorite, anyone that really knows me, knows my favorite is chocolate gravy and biscuits!!!! I took it to a breakfast pitch in at one of the gatherings and the pan was scrapped clean! :thumbsup:

Corned Beef Hash and Eggs. Easy to make, easy to clean up.

In a small covered sauce pan, spread a can (you didn't think I was going to make the CBH from scratch, did you?) of corned beef hash in the bottom of the pan. Top with 2 (or more/less) eggs. Cover the pan and put over LOW heat. It's done when the eggs turn white. Serves 2. For a single serving, use a small can or a half regular can.
I'll burn that bridge when I come to it.
