Constructing entry door to withstand the elements, possible?

Hello friends-

To piggy back off an earlier newbie post of mine found HERE discussing how my wife and I want to make a mobile coffee vending trailer, I have a follow up question.

Since my design will have a pop up roof to be able to fit under a standard 84" garage door opening to store it at home, I will need a custom door made as well. I see many RV/trailer type doors on ebay and would prefer this route if the price is right, but they are all far too tall. I will need it built for durability, but I'm having issues finding a size that will work for me or they are too expensive. HERE is one example, the price is right but it's too tall, we will need like 48". Can this be cut down and have it the bottom reassembled to look good and be durable?

Or has anyone ever built one that is standing the test of a 4 season upper midwest type weather?

You could cut down a storm door and frame

Only issue is and I should have mentioned this, I kind of don't want any window or a very small one at best.
