Trimming quotes to only the pertinent statements / photos is always good etiquette.
But having large images, repeats of images, or a bunch of photos in a signature doesn't necessarily mean that it impacts the forums.
If the images are stored elsewhere (such as photobucket, imgur, your own website, etc.), the forum only has to reference them and let your browser retrieve the images from the actual source. The storage and performance impact on the forum is basically the same as dropping a URL into a post (in one word, 'negligible').
Even if the images were uploaded to the forum and are stored on this server, the impact is no greater, no matter how many times the image is quoted on a page. Modern browsers will retrieve the image once and and insert it into the various places where it is repeated. Bandwidth usage and storage requirements should not be increased by repeated use of the same images on the same page.
Of course, quoting a bunch of images may impact the user experience - especially on a slow connection. And it can be very annoying to many people to see someone quote an entire 'build update' with a dozen photos in it, directly below the post with the update and photos, just to say, "Nice job. Looks great!" (This is a universal concept across all internet forums.)
So, it's just good manners to trim quotes to only the pertinent information, and delete any images in the quote unless they are necessary for context.
