The insulation is literally styrofoam with foil back. If cut correctly, it presses in tight, and any gaps filled with expanding foam. I glued it to the floor with liquid nails and ran a bead of foam around the perimeter not so much to seal, but to create a ledge to retain the foam if the glue were to let loose.

Really no opportunity for water ingress.

I saw a forum member coat the inside flooring with a "Rhino Liner" type coating. It looked pretty darn nice and should be about bulletproof. Might just do both sides if the OSB is strong enough for the loads you will be hauling. Probably not cheap, but 0.75" marine grade plywood is spendy too.

You could also use sheets of coroplast to "seal" the underside. That is how the big travel trailers do it. It can be removed to service plumbing, elect. etc. and could protect the insulation or undercoating/ bedliner spray.
