With this update I can see that you seem to be doing everything right for the type of electrical you're planning. The extension cord thing is a good idea. I've used it in applications myself. A very cost effective use for wiring with stranded wire, especially if you've got a few old long ones lying around that have seen better days.
Not that you need my opinion... just an acknowledgment that I didn't quite understand before, now I do. Looks good.

Update: Progress has been a bit slow due to working O/T and other commitments. Insulation done and 1/2" plywood stripping added for an additional thermal barrier. An extra 1/2" of XPS is being installed between plywood strips.

Installing T1-11 with 4" O/C grooves on ceiling and walls. I'm leaving the wiring channel at the top of the walls open for now and will cover it with trim to make it accessible without removing any paneling.

You went with the good insulation. Should keep things cooler in the heat. I find that I realize I insulated the thing more for the hot than the cool weather. Glad I put the insulation in.
