Thanks for all the info!

I told my wife about cast iron and she dug in the cuboards and found 4 wagner ware frying pans, that she says were my grandmothers...

Some have a bit of rust, but I'm going to see if I can clean them up and fry an egg or two... Heck maybe even some bacon.

Phil, start with the bacon...it'll help reaquaint the pans to being seasoned and doing the job they're supposed to do. Then do the eggs.

I read today that food prepared in cast iron has a slightly higher level of iron in it making doctors give it the thumbs up

If you can, search and find a Dutch Oven Gathering. Nothing like it. Where I live, a group of members from a regional D.O. cooking club came and cooked at an Old Western Day sponsered by the local Cowboy Church.

Ingredients supplied by local businesses, The D.O. cookers were dressed up in prarie life costumes and cooked for about 500 people. Nobody went hungry. Nothing like it. Some dishes were fried, baked, boiled, roasted, you name it and it was cooked in some form of dutch oven or cast iron cookware over an open pit.

My spouse and I use some form of cast iron just about everyday. Easy clean up and the weight of the pans help keep then on the stove

And using metal utensils in aluminum will spaul of Aluminum.
Ingestion of above average quantities of aluminum has been linked to alzheimers.

And burning teflon will give you an instant case of polymer fume fever.

I like my cast iron (now that I have learned how to use and care for it).

I don't think my darling live in sister will ever put one in the dishwashr again. Hell she wouldn't speak to me for 3 days after I went off about that little bo-bo.
Growing older but not up !

Hey Kevin...it has to be what cooks dinner, especially if you don't have a galley! ;) Sorry, it was just there and someone had to say it... :R Doug

No disrespect intended, but that's Robert Kennedy's quote. Peace.
