Chile Relleno Casserole

Thanks to Mary for the recipe. She had cooked this at the Los Osos Gathering (and we've been bugging her ever since for the recipe!)
So she dug out the recipe and Kathleen made it tonight. YUM!!!

Yes we use our dutch ovens at home. This one doesn't have an iron top, so we use the broken waffle iron (fits perfect!) when camping.

Well, I was out in the garage cursing the biscuit joiner, and when I came in, there it was! I had no idea that she was making it even. So blame her!!!

Leftovers in the Fridge

I made something like this that has been a huge hit.

You take a tortilla shell spread refried beans on it, sprinkle shredded chicken on, a little but of salsa and cover with cheese, do the same thing about 10 layers high. Pile cheese on the top and pour in enchalada sauce to cover up to op layer. Bake untell cheese is melted on the top, about half hour.

When done cut like a pie and serve with the sauce over the top.

I made it two weeks ago camping. Since have made it 2 more times at home since it is a huge favorite of the kids and wife.

Ingredients:

Pack of tortilla shells.
1 can refried beans 2 if you want it a bit thicker.
1,2 cans enchalada sauce.
2 medium cans diced chicken breast, or make the shredded from your favortie parts.
2 bags of your favorite shredded chees. I use sharp chedder.
2 normal size jars of salsa one to use after with chips.
1 bag of scoops to have with the meal.
My Idea of plans are a tape measure, a saw and a dream.

Wow! So what's the recipe? My Wife really likes the Chili Rellenos, its what she usually orders when we go to a Mexican restaurant!

Alfred, the recipe is under t "Chili Relleno Casserole for a 12" Oven" in the recipe section. I make it because i also love the chili rellenos. Lots of other great recipes in our recipe section!
