Valentines Muffin makin'

We went to Martin’s Creek Texas SP for a Valentines shakedown cold weather camping. Cindy gave me some CI for Christmas and we wanted to try it out. We tested it at home several time and now for something new – DO chocolate chip muffins out in the wild.

Time for a check – ummm muffins


Cindy says “I want his one – and this one, heck I want em’ all, but have to share.”

did they not burn on the bottom? I do remember reading a DO cooking book and it mentioned using a round cake rack ( you know, like a cookie cooling rack) on the bottom of the DO to help keep the bottom of a cake or bread or muffins from burning from being on the very bottom of the DO and so close to the heat.

Sounded like a very smart idea to me.

any type of trivet will work. This works if you put a loaf pan, muffin tin or pie tin in the DO. Works for anything you dont want to sit on the bottom.

They didn’t burn – We used Reynolds Jumbo aluminum foil type cups (3.5 inch). Nothing stuck to the sides either. We used a bayou classic grill as our stand – maybe it had something to do with heat distribution.
