Loooky what I got for my birthay from Mrs starleen
I have been searching for a CI cornbread cooker that made cornbread in wedges, not like fish or corn (which is what I found) for a while. And guess what showed up - WOW

new ci pan

Postby John T. Hodgen » Tue Dec 30, 2008 10:15 am

Happy New Year,
 Nice pan-my gandmother had an old one when I was a kid(now 53/54 jan 28) :) , But hers didn't have the hole in the middle  , wonder what that hole is 4. Maybe to have a rod with small platform on it to hold pan above an open fire-just a thought but you probably need to make it, or a flat round steel piece with a hooked rod to hang from cooking rod across the fire? :QM Anyhoo enjoy dat cornbread!! I bought a Lodge just like that a few years back. Can't remember where for sure. I think the hole is for more even heat distribution. It works awesome.

The recipe I use has you pre-heat the iron to 425* F or so before you put the batter in. It sizzles as soon as it goes in and sticking is never a problem as long as you grease the iron sufficiently.

I've had one for several years and use it occasionally. Makes great cornbread. I use it just as much when strawberry season comes in to make cake wedges for strawberry shortcake. Enjoy your birthday and present.
