Why not build a mockup on a flat board just to get all the geometry set. Some people have even just attached a mockup board right to their inside galley wall and used trial and error to find the best mounting locations, and then transferred to the actual wall.

I would be just as concerned with making or using adequately strong bracketry and mounting reinforcements, so as to avoid blowouts. I think people tend to underestimate the leverage multipliers involved, and some of the readily available ball stud brackets (and fastenings) just aren't up to the task. Well documented elsewhere on the forums.

For me, it's the cabinets and wood trim that finish it nicely. What will go in the little cubby hole on the left side of the galley counter?
