Cracker Barrel Country Store Hash Brown Casserole (copycat)

Cracker Barrel Old Country Store Hash Brown Casserole (copycat recipe)

This would be a good DO recipe for a Gathering potluck!
Serving Size: 12

Ingredients:
1 2 lb. pkg. frozen Hash Browns
16 oz. Sour cream
1 can cream of chicken soup
1 stick butter
1/2 C. Chopped onion
2 C. grated sharp Cheddar Cheese

Preparation:
Melt butter and set aside to cool down.

Place potatoes in a greased 10x14 inch dish. (or adapt to DO, I don't have a camp DO so cannot do it for you)

Season hash browns with salt and pepper. (and anything else you want)

In a bowl gently combine minced onions, sour cream, and cream of chicken soup. Stir in cooled but still melted butter. Mix these items together.

Pour soup mixture over potatoes; sprinkle with Cheddar Cheese.

Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.

Variation: Substitute 1 cup PepperJack Cheese for 1 cup cheddar

Add chopped chili peppers or bell peppers.

REALLY good for this type of recipe. People who have eaten it at CrackerBarrel say it's the same.

MMMM.mmmmm I don't do the do.. (the DO) but remember that Warpony made some kind of cheesy potato dish using hashbrowns... it was yummy...

I wonder if I could put it in a foil baking dish and put it over coals? or maybe in a crock pot for an hour or ?

Julie,
The recipe as listed is for a dish in the home oven. And basically it is something you heat, not like baking that is science. So probably any way you want to warm it (within normal cooking parameters :) would be fine.

The thing thats fun about this recipe is the flexibility. Really want to do the pepperjack cheese with peppers in it. Mmm, now I may have to do it soon.

:twisted: We have a similar recipe that uses green onions too. We shorten the cooking time by pre-frying the hash browns so any cooking method should work. :thumbsup:

good substitute: the mushroom soup with the roasted garlic.

cheddar's good, but that shredded four-cheese Mexican blend's not bad!
