Seafood Chowder

7 strips of bacon
2 cps. onions
6 tbs. instant potatoes
1 qt. clam juice
1 qt. milk
1 qt. heavy cream
4 lbs. yukon gold potatoes
1 lb. clams
1 lb. scallops
1 lb. jumbo shrimp
1 lb. shrimp
1 lb. mixed seafood (octopus, squid, mussel, cuddlefish, etc.)
2 crab
4 oz. spicy brown mustard (spreadable)

Makes 10 quarts... Works out to 7 dollars per quart.
(Use a 14DCO or larger)

Image
Start off by cooking bacon diced not too fast or too hot... You want the grease.

Image
Add 2 cups of diced onions...

Image
When the onions start to turn transluscent, sprinkle the instant potatoes over the mixture and then add the quarts of clamjuice, milk & heavy cream.

Image
Slice and dice the potatoes and add them to the mixture... Let this cook for a bit.

Image
When the base begins to thicken and the potatoes start to cook... Add the mustard and all of the seafood except the crab and shrimp. Lift the lid occasionally to make sure it's not boiling and stir while the lid is off.

Image
Now take the two crabs and back them so you can easily crack the body and leg meat. (Note to self... Remember my apron next time)

Image
The chowder is cooking away while I'm off cracking crab...

Image
Add the crab meat and whatever shrimp you can without overflowing the oven...

Image
There yaa have it... 10 quarts of awesome seafood chowder.

Image
Uh-Oh... It's going fast!!!

Image
It's because it's so good and every bite is loaded with STUFF!!!

Image
Here... Have a bowl!!!

Sorry... All gone.

I'm gonna make this on my next weekend off. I saw that "Seafood mix" at the store and was wondering what someone would do with it.

Yummy, yum, yum!

Did you actually use crab that you caught that day! That's my kind of feast!

Todah,
Didn't have to...
Crab is at historic low prices right now because of such an incredible catch... They're big and plump full.
The two crab I'm holding were caught the day before and I paid $2.98 per pound. (Worked out to 11.28 for two crabs... Excellent!!!)

Rock,
Let me know how it turns out!!!

Ageless,
Didn't I read that somewhere else already???

Steve,
Man I hope Guy is staying dry. :worship:
He called me a couple of days ago...
Was fishing somewhere in the Lower Keys. :frightened:

Dean, MAN!!! that looks good! I'm drooling just looking at my computer screen.

I wish seafood was so readily available in our neck of the woods (Kansas). We have it, but, well...you know...it's traveled to get here. Still, I'm gonna see what I can get and I'm gonna make this and we'll salute you while we eat it! Paul LOVES seafood (so do I) and he'll appreciate my efforts (no matter how much I may have to modify based on availability here)

Thanks for sharing!!!
Lynn

Good grief that looks good!

I didn't get a chance to make it. With so many holiday functions we really haven't been home a lot.

But yeah, I'll let you know how it turns out, I'm definitely making a pot. I just don't know when.

Get thee to the frozen section at your market. It is not cheap (but not bad) and there is crabmeat, whitefish (cod, haddock) and all sorts of other good stuff that was packed right at the time of catch.

Just be very sure to check the country of origin and buy appropriately.

Speaking as a New Englander I prefer to buy my fish fresh, but this stuff is not at all bad if you're landlocked.

Just say no to canned fish...of any kind. :)
