Something I learned right here on this forum and this will make any cornbread sweet...
Cornbread right out of the oven, with warm sorghum and melted butter.
Geron was the one who turned me on to the sorghum.

Corn Bread

Postby Toolie » Fri Oct 06, 2006 9:10 am

I could eat cornbread everyday. The Golden Corral around here makes it pretty good - I think they mix in some cake mix so it is a little sweet.

My Mom makes the best cornbread I've ever had, been at it 60 of her 75 years. Like Dave said - baked in a cast iron frying pan for a crisp crust. She melts lard and butter in the pan - ...

Mom interjects that the faint of heart may use shortening - lard being a cuss word these days  ...

...anyhow, she stirs that hot melted stuff into the mix, pours it back in the pan, oh OH how it sizzles!!!

This is just too much for me, I can't go on......

I like the cornbread a little sweet, although I like the plain too. Cornbread and milk is good too. I just like cornbread of anykind. :D

Cornbread, Sweet and moist that's how I like it, with some butter and sorghum even better.

I don't care for the dry stuff It's like eating a hand full of corn meal.

of course!

Postby stbuch » Sat Oct 07, 2006 8:35 am

Sweet, of course! I always make mine sweet because that is how my family likes it BUT my dear departed mama would roll over if she knew I put sugar in cornbread. She came from the same crowd as Chip- cornbread with sugar would not be cornbread at all.

I prefer my cornbread straight. If gonna add sugar then make something to drink out of it.

My father and I defer in how we prepare the pan for cornbread. He heats pan with a bit of grease (Yes I said grease meaning lard) and a bit of meal in it. Then he adds cornbread batter and bakes.

I just grease the pan pour in the batter and throw it in the oven. We both come out with good corn bread.

My brother likes to do the same as my father but lets the pan of batter sit on counter for 10-20 minutes. He claims that is to let it rise.

Now for you folks that think you got to put flour in your corn bread along with the sugar. See my first line.

I want cornbread not cake with my meal.

Cornbread with butter and honey for desert is OK.

Postby crankshaft » Sat Oct 07, 2006 3:04 pm

Corn Bread and sweet milk. My wife almost fainted the first time she saw me crumble corn bread into a tall glass and pour sweet milk over it. Yum. Yum Not sweet corn bread .

Some times corn bread with pinto beans.

Some times for breakfast corn bread with honey on it , not in it.

CORNBREAD

Postby CPASPARKS » Sat Oct 07, 2006 11:32 pm

My wife always cooks cornbread when she cooks red beans (pinto beans).

Pan fried taters and onions with that meal too.

If it is hotwater cornbread, it needs to be unsweetened. :)

All other cornbread is game for sugar or Splenda.

I didn't vote because I agree completely with StJohn. Yes, I like cornbread crumbled up in both sweet and butter milk. This should be the sweet cornbread though...at least in the sweet milk.

I'm with Chip, if you put sugar in it, it's cake not corn bread.
