Posted: Tue Dec 22, 2009 10:55 pmNot a hard and fast rule, but a Virginia Ham is usually in order. Sometimes a bonus Prime-Rib will be in order as well. Even at Christmas we're still dealing with turkey hangover. One year when it was just me and Sarh we did cornish game-hens, they are quite yummy...
Nothing like a good 'ol Virginia Ham soaking in the bathtub for a few days to get you in the Christmas spirit!

The roast was quite a feat. In Texas, where we don't have such things. It came straight from Newfoundland. In an unmarked suitcase, hand carried by my girlfriends Canadian dad.

Karen and I, errr, Karen made fifteen dozen this year....I did the running when we would run low on something, we started with 20 Lbs of masa this year. mostly a beef and pork 50-50 mix, great flavor
a couple dozen cheese, made with a pepper/jack, nice bite without being too hot for the uninitiated, and a couple dozen chicken
as you say, nothing like home made tamales, been one of our favorites for many years
neither of us have a latin heritage, but both grew up in So Ca, great place for learning many styles of cooking.

Note; My Dad is one of 13..I have 38 cousins and I have no Idea how many second cousins I have, not to mention all the Aunts and Uncles who aren't really Aunts and Uncles........and there kids.
Now if the next day is NOT a work day, as it is this year there is another family meeting, with lots of people, lots of yelling, eating , drinking, kids running all over the place, card games breaking out all over the place, who now owes who money, a new list of "Who's not talking to whom" is formed all under the guise of "Were going to help you clean up".
I kick EVERYBODY out at about 11PM...this is where I start MY own list of Who's not talking to Whom.
And the next day I clean up the place all by myself after the "Were going to help you clean up" HELPERS leave.
My Dad and I eat all the leftover Fish, drink what little is left, fall asleep in our appropriate "Comfy chairs" wake up...go home and go to bed.
Then in about 2 weeks I find out "Who's not talking to ME".
God I love it.

Christmas Eve is when we have all our whoop-la.
It all starts Christmas Eve, Eve. when 4 or 5 of my cousins come over and we start to make the sauce. Then a little menu planning, a "who's coming list" then a "Who's not talking to who list." A card game brakes out and everybody picks out a sofa and is asleep by 3am.
Then its up at 4am, we all go to a Diner for breakfast and then to the Philadelphia Fish Center (Liberty Street) to buy all the Seafood.
On the way home we go through the old neighborhood, stop at St. Donatas at 65th and Callowhill for the 8;00 Mass. I love the 8am mass, if your in a hurry this is the Mass for you. 20-25 minutes tops.
Then we all stop at the Italian American Citizens Club (66th and Callwohill) where we see a lot of other guys doing the same thing as us. Meet a bunch old friends. And our Uncles, who haven't been up all night and this is there first stop.
We leave just as a Card Game Breaks out.
Then we get home and all the women are there...the volume goes up. Where my cousins, who have now grown in number to about 10-12 (since the stop at the club and Mass) and I are told at great length everything we did wrong.
People in and out all day, cooking, eating, yelling then a Card Game Breaks out.
Some sneak away for a nap, others Guts it out.
People start showing up at about 5pm, we eat at 6pm. Do some singing, some story telling, some clean up, more yelling and screaming, kids running all over the place, and then a Card Game Brakes out.
Out to Mass at 11pm and that's about it.
Christmas day is a nice Chill out day...unless your in-laws are "Amadagans" ( non Italians..Americans), then you have to go see them "cause they don't like fish" (wooses).
We had 42 for dinner,
Shrimp
Scallops
Spaghetti with clam sauce
Fried Flounder
Fried Smelts (bait)
Calamari (more bait)
Mussels
Lots of Bread, lots to drink, kids running all over the place, yelling & hollering, real noisy,half in English/half in Italian, hand gestures throughout.
God it was great.
