Anyone building/built a Kuffel Creek "Cubby"?

I have purchased Kuffel Creek "Cubby" plans and have been looking at the placement of the water tank. The plans call for placing the tank below the cabin body, under galley area, between the frame rails.

Has anyone used this design and have you had any problems?

It seems to be very vulnerable design being a plastic tank and the possibility of dragging it when going into steep entrances to gas stations, campgrounds, etc., or just getting hit by road debris.

The cheap fix is a couple surplus jerry cans replacing the plastic tank.
Mopar's what my busted knuckles bleed, working on my 318s...
