I have a Traeger Pellet smoker. Below the grill grate is a large steel plate on an angle. I cover it with aluminum foil. The drippings run down into a small bucket that hangs outside the smoker. After each smoking I change the foil and about once a year I tear the whole thing down and use a degreaser. It stays pretty clean . Before I load it, I run the temp up and brush the grill clean.

What type smoker are you using?

BGE....turn it up to maximum and let it ride....everything inside is incinerated. Just be sure to remove the cast iron grate....

Yessir, it's like a self-cleaning oven, it burns everything and turns it to ash. When I did my XL, it was nice and white inside again it looked brand new. Cooked my gasket though. Replaced all of mine with high heat gasket, but it got cooked on my Lg when I did a clean burn.

Yeah, my gasket is shot...but it still works....maybe I'll get to that tomorrow....we go through a gasket a year because if our 700 degree pizza oven use. :). The versatility in the egg amazes me!

When I clean mine I burn it out with lighter fluid and then wire brush all the stuff off. Do it about 2 times a year and food stays tasting good.

I can't go as high as true ceramic kamado cookers but I crank up my Akorn kamado to around 600 degrees for an hour or so to burn out any fats that rendered during "low and slow" cooks.

BTW, I added Nomex gasket to my Akorn and so far it is holding up well.

I went thru all my eggs and put Nomex gaskets on them. The one on the Lg isn't holding up as well as I like. I'm unsure if it was the adhesive I used or what. It was the highest temp RTV I could find. I'm thinking about trying a "Rutland" gasket when I have to replace it.

I have an ungly drum smoker,works great and it only cost me around 90 dollars to make it,it cooks a lot of food at one time and does not burn

I take mine out to the middle of the yard and "Lightly" Pressure wash it.

Then after all the junk settles....I Pressure wash myself! :D

I have a Weber Smokey Mountain smoker and all I ever do once in a while is take a brush to the inside of the lid and sides to brush off any flakes of soot so they won't fall into my food.

It takes a while to build up a nice smoke patina on these things. I don't know why you'd want to remove it and start all over...
