We have come to favor a meal on a stick a shish kabob. One of the problems I am currently having is finding recipes that meet heart health and diabetic needs, no salt and very little sugar.
Your meat of choice which can be marinated in and or frozen in a baggie, low sodium terraki, salad dressing...

I find a fatty roast, cut it in strips and roast it on a hot dog stick. Then put it on a bun and garnish just like a hot dog. I try to avoid hot dogs too salty.

One of my favorites is to cut boneless pork chops from a pork loin (much cheaper than buying chops), dump them in a gallon ziuploc with marinade and FREEZE. Once the chops are thawed in camp, they are also well marinated. Throw them on the grill, add a simple spinach salad and toss the bag. Quick, easy, very healthy.
The more stuff I take along, the more time I spend taking care of my stuff!

Recipe for Coco-Cola chookie wings. (Chookie is Australian for chicken)

We don't always serve these with rice, I simply cook the wings and then we pig out on them. For my wife and I, I only cook five or six wings. There are three parts to a wing, the tip, the middle bit and the part that attaches to the body. Select five or six whole wings (or more). Cut the tip off and use for whatever you like. Cut the remaining wing into two pieces. Five wings makes ten pieces or five pieces each for two people. Still use 1 cup of Coca-Cola if cooking ten pieces.

Coco-Cola Chookie Wings
Ingredients
2 lb of chicken wings
1 cup of Coca Cola (NOT DIET)
2 Tbsp of dark Soy Sauce
A little Salt

Wash all the wings and pat dry on paper towels
Cut wings into pieces, cutting at the joints.
Discard the small wing tips or keep for making chicken stock
Put all the wings pieces in a bowl and add the Soy Sauce.
Mix the wings well so all the wings are covered with sauce.
Let stand for 15 minutes

Heat your Wok and add a tablespoon of oil, peanut oil is recommended.
Place wing pieces and sauce in the wok or frying pan if being used.
Fry wings on one side for 5 minutes then turn over and fry the other side for 5 minutes.
Add 1 cup of Coca Cola, cover and simmer for 15 minutes.
Add some salt to taste.
Remove cover and simmer for 15 minutes. Watch the wings carefully as the liquid
reduces down to a thick sticky sauce. Do not burn the wings by reducing the sauce till nothing is left.
Serve on white rice or simply pig out on them..

Variation

Add half teaspoon of finely grated ginger and half teaspoon of grated garlic to marinade
to soak the wing pieces first. Can also add a capful of rice wine to the marinade and mix well with hands.
Add a teaspoon of Sesame oil to the wok when cooking the wing pieces.

Sprinkle some Sesame Seeds over the wings just before removing from the wok. Mix the wings well to combine the Sesame Seeds throughout the wings.

Enjoy, I know you will cook up all the wings you have bought. These are so good to eat.

One thing we allways have is grilled sandwitches filled with tomato, cheese and optional onion rings. It goes very well with a good steak and our traditional sausage.

Another side dish I love is sweet potato buried in the sand below the fire or wrapped in foil and placed on the grill. Giving it "massage" with gloved hands every few minutes during grilling produces food for the gods.

Venison backstrap/loin steaks over the coals of a wood fire. I use one of those grill baskets.

Sweet corm roasted on the coals in the husk... use aluminum foil if you must, but leave it in the husk.

My crusty pork chops are a favorite...
Coat one side of a pork chop w. olive oil
Sprinkle on salt, black pepper, garlic powder, dried thyme (more than you think - you want a "crust" when you're done), and rub it in. Ground cayenne if you are into that.
Flip and rub the other side like the first
Grill over the coals - cook it kinda slow to let the flavors work in (pork chops cook quickly, so slow is relative), then sear it at the end to get the "crust".
Great with grilled corn on the cob, and potatoes of any kind.
You can pan fry the pork chops too and then make a "gravy" for the potatoes with the drippings.

The same rub can be used on a pork loin roast. Remove the lid of the roasting pan to get the "crust" to form at the end of baking.

Foil packages. Chunk of meat with anything and everything thrown in with it. Wrapped up in foil. Throw it in the coals for a while then get after it!

Just did a Fattie last weekend. Two 1LB breakfast sausage rolls. Combine and roll out between 2 sheets of foil. Add your favorite filling. I used Apples and onions that I saute'd some. Then I put in slices of Lorraine Swiss Cheese. Roll it up like a jelly roll and weave a LB of bacon on it. Slow cook till the bacon is done and slice. An appointment with a Cardiologist would be the next step. :lol:
