Don't eat hamburger less than well done unless you buy the roast and grind your own meat at home. (Wash all equipment first and again after, and don't store raw meat above cooked food, or use the plate you brought raw meat to the grill on to carry cooked meat back!)

That's the sanitarian talking. "Comminated'' meat (sausage, ground beef, cold cuts, wienies) carries a far higher risk of contamination than any solid-muscle cut.

Burger: To feed four people, buy:
a pound and a half of good lean chuck
a pound and a half of good lean top round
a large yellow onion
a small head of raw garlic

peel and rough chop onion and garlic; cut meat in 1/2'' cubes, removing
excess fat and all connective tissue as you go.

combine:
1 Tbsp coarse kosher salt
1 Tbsp coarse ground black pepper
1 Tsp chipotle pepper, ground
1 Tsp red paprika, ground
1/2 Tsp cayenne, ground
1/2 Tsp ground white pepper
1/8 Tsp ground ginger
1/8 Tsp ground cinnamon
1/4 Tsp ground cumin
1/8 Tsp ground anise
1 small can tomato paste
1/2 can water
1 small can roasted chopped green chiles, drained

in batches in blender, coarsely chop meat with onions and garlic
put into a mixing bowl and add spice mixture
cover and chill 2 hours to overnight (longer is better)

Slice extra-sharp cheddar cheese about 1/4'' thick
Slice ripe tomatoes about 1/4'' thick
Crumble blue cheese
Slice lettuce thinly

Form patties about 1/2'' thick and 5'' around
Grill patties over mesquite charcoal to medium-well -- turn halfway through, and on half the turned patties sprinkle blue cheese; on half, melt cheddar slices
Brush insides of buns with melted butter; toast on grill while patties rest

Assemble: bun, butter-side up; dab of chipotle mayo on each half; lettuce on each half; one pattie on each half, cheese side up; between patties, more lettuce and sliced tomato

Good with potato salad:

Scrub about a pound of egg-size red skin potatoes
Scrub about a pound of egg-size white skin potatoes
Cook in lightly salted water
Meanwhile strip six stems of rosemary of leaves
Chop six leafy stems of sage finely
Chop six leafy stems of mint finely
Chop three stems of thyme finely
Wash and dice two medium cucumbers
Peel and finely dice one small red onion

Drain potatoes; cut in eighths and mix with remaining ingredients in large bowl. Salt and pepper; add 1 pint ranch dressing and (optional) 1/4 to 1/2 cup bacon bits. Chill 30 minutes or more before serving.

:lol: :lol: now that is my kinda burger...there is a truckstop in Medford Or. on I-5 that used to serve a 64 oz hamburger(they may still)...would stop and get one and eat onit for a day(or two)...goooooood burger...(urp)

...then there is the ultimate beef heart attacker... THE BIG TEXAN in Amarillo, Tx....They feature a 72OZ steak dinner for FREE...that's right, FREE...all ya gotta do is finish the whole dinner inna hour...about 1 in 6 make it...costs 50bucks if you bust out :o :lol:

Ahhhhhh! The Big Texan. 8) Good food there, but I've watched too many people try and eat that big steak dinner. Even saw one of them give it back before he finished! :rofl2:

I could probably do the entire steak... but if I have to eat the rest of the meal too, well, I don't think I'd make it. Still for $72, Chell and I can gnaw on it, and take the rest home in a doggie box.

I think that a show about Kabayashi, the little Japanese guy who's won the Nathan's Hot Dog Eating Contest for the last few years, showed him going to that steak house you're talking about. I don't remember if he finished it, though.

And Mike--what restaurant serves that burger?

Apparently there is a place near here that serves burgers like that. I was in an electronics store and saw the news clip with no sound. They showed a groups of people buying them and eating it like a pizza.

I made mine up for dinner this afternoon - 2/3 lb. of lamburger (lamb GOOD!) - before heading out with some friends to see Pirates of the Caribbean - Dead Man's Chest. GREAT movie! Be sure to wait through all the credits - there's a bit extra at the end.
Along similar lines of the Big Texan, there's a steakhouse in Cucamonga, CA (no, Bugs Bunny did not make that name up) called Pinnacle Peak, where they offer a 42 oz. "Trail Boss" steak. Years ago there was a girl going to La Verne College who weighed maybe 85 lbs. soaking wet. Her sorority sisters bet her she couldn't eat it all, plus the sides. She did. Nearby there was an ice cream parlor called Farrel's where they had a HUGE sundae called the Zoo - it was about two gallons worth of various ice creams topped with animal crackers. The sorority sisters said, "OK, next time we'll bet you you can't eat a Zoo." She replied "Right now - double or nothing." The waiter at Farrel's heard about the bet and said he'd pay for it if she ate the whole thing.

He paid for it. And the coffee she washed it down with.

My uncle ate one of those and all the trimmings back when they were 50 bucks. He was a trucker. He died a few years later. They found him in his truck at a truckstop in Flagstaff, AZ. He died of a heart attack. He weighed 300 plus. He was a strong man I guess as it took 2 years for that meal to kill him. :D
