That time of year

OK folks, it's that time of year again. I don't even have a garden this year, but I've got yellow and zucchini squash overflowing the kitchen. They have been "donated" by neighbors, relatives, friends and enemies. I've fried them, boiled them and made a hamburger/squash casserole out of them.

Does anyone have any different recipes for them?

yep, make up some zuchinni bread and freeze it ... take to every teardrop potluck or for thanksgiving giveawy ... or sell it.

don't know if you can shred it and freeze it.

or invest in a foodsaver ...
Some things are way over my head !! ...but it keeps me looking UP!

:o :twisted: the last time I had too much zucchini I shredded it and make "bread and butter" relish. Just added some dill weed to the normal recipe. Boy was it good on a hotdog. :thumbsup:

Wash and dry it.Slice lengthwise into 1/4 in strips.Brush strips with olive oil,dust with salt and pepper.(You can choose other spices depending on your taste)Then lay it on the grill and let it brown just slightly.(I like mine a bit toasted).I really like it like this since it doesn't heat up the kitchen and it's easier to watch while cooking the meat.I seldom cook indoors in the summer.It's fresh veggies or grilled stuff.

I also peel and quarter an onion and wrap it in foil with a tbs. of butter and bake it like a Tater.(a tbs of B-B-Q sauce works too)
