Pork Chop and Onions

I made this for the first time in awhile, I'd forgotten how good and easy it is:

Pork Chops and Onions

2 big pork chops
3 medium onions
1/2 bottle of dark beer
4 slices of bacon
1 tsp garlic
2 tbs flour
2 tsp salt


In a dutch oven, fry bacon until crispy. Remove bacon and set aside. Brown pork chops in the bacon drippings. Remove and set aside. Slice onions in thick slices. Place onions, beer, flour and garlic in dutch oven. Crumble bacon and add to pot. Place pork chops on top of the onions and cook for 45 minutes at 350F with the lid on. Serve with onions and juices spooned on top of pork chops.

Perfect timing. Pork chops were on sale this week. I'll be trying this one for sure.

I'd hang on to a bottle or two for the next batch of pork chops. You'll probably want to make some more in a month or so. :D

Here you go. Served with long grain and wild rice and a salad of mixed greens with black olives, dried cranberries and a balsamic viniagrette.

The beer of choice was a locally brewed oatmeal stout from Free State Brewery. :thumbsup:
