Cheddar Brat Soup

When I found this it was a crock pot recipe. I didn't have time that day so i made it on the fly and doubled the recipe. At the bottom you will find the original recipe:

My Version:

I cut up and browned 2 packs cheddar brats (10-12),
then added 1/2 fresh vidalia onion,
2 red bell peppers and
1 tsp. of minced garlic. cook until onions are translucent

meanwhile:
boiled the potatoes alone until fork tender then drained

then:
put brat and veggie mix, potatoes,
2 cans drained green beans,
2 cans cream of mushroom soup,
1 1/2 cups chicken broth in dutch oven.
Add milk until desired thickness. Simmer for approx. 20 mins.

to finish:
add pepper and either cayenne pepper or cajun seasonings to taste.
Serve with shredded cheddar available for individuals to add to taste.

Note: I used cajun seasonings, but with the salt in the brats, it might be better to do a dash of cayenne for a little heat and then salt to your own taste if necessary. You COULD skip this and just do pepper, it depends on your heat preference.


Crock Pot recipe:

6 brats, browned and cut into 1/2in slices
4 potatoes, peeled and cubed
1 Tbs dried minced onion(or a few spoonfuls of fresh onion)
1 (15oz) can green beans, drained
1 small red bell pepper, seeded and chopped
2 c shredded Cheddar cheese
1 sall can cream of mushroom soup
2/3 c water or ckn broth

Mix all but cheddar ,cover, and cook on high 3-4 hours,til potatoes are soft.
Add cheese the last 30 min of cook time.
