Foamie on a pontoon boat instead of a trailer

I have built 2 squaredrop foamies (one for me and the wife and one for our daughter). Now I’m thinking I could build one on an old pontoon boat and go camping on the water. Has anyone done this already and have tips and pics??

The thought popped in my head to have a dual purpose helm/galley. Only because the idea of "driving" it from the kitchen seems funny to me. Well that, and a cabinet/countertop would be convenient for mounting all the controls.
 
Visibility, i.e. of the driver's horizon, might be an issue if you're steering an outboard motor from the rear.

Makes a guy wonder what the legalities might be if your natural forward view was blocked, but you set up, say, two cameras angled slightly to port and starboard, with a center-overlapping, real-time view on a couple screens back at the control station.

Unless you happen to be shorter than 48-50 inches or so, you should be able to see over the cabin from any type of captain's seat or perch. If not, just stand up, or am I missing something?
