Orange Peel Muffins on the trail

Here's something my little girl LOVES that she picked up in the Girl Scouts. Hope you enjoy.

- Obtain your favorite flavor of Jiffy Muffin Mix or similar
- Cut whole oranges in half, pull out the yummy orange guts and save for a snack. Try not to mess up the peel because thats what we need.
- Pour prepared mix into the orange peel half, leave a little room.
- Wrap in tin foil with a tent on top (leave room for the muffin to expand) and place in the outside edge of your campfire.
- Let it cook for a good 10-20 minutes, depending on size and heat.
- Scarf down yummy goodness
 
Sounds good! I might try that with other goodies that are sweeter and less healthy for you!!! LOL Like maybe make a cobbler type deal in the oranges! Cherries and orange would probably go good together with some dough in it?!

Nice, You can also cook eggs in an orange peel. It gives them an interesting flavor. Usually, a peel will last long enough to do two eggs. Just remove the first one from the peel, crack the second egg in and place it back in the fire while you enjoy the first egg. Otherwise, the peel works as a serving dish for a no clean up breakfast.

Awesome idea Wagondude, we will try that one for breakfast on the next campout in October!

I just found this thread !

Speaking of cooking in the fruit here is a picture of a great rice dish that was served at our fall gathering(we had a thanksgiving theme).

I am trying to get the recipe. I do remember there were several spices and the pumpkin that was removed was strained of membrane and seeds and then returned to the mix. There were two slightly different versions and one was cooked in foil while the other was prepared in a dutch oven ( all part of the experiment )
Both turned out great !
