Rancid grease in cast iron.

Of course if you need to.

If you have otherwise been caring for it properly, only a light re-seasoning is required.

wipe a/o scrape all the offensive grease away

set on stove full of water and boil out as much more as you can

then wash gently w/ Dawn(mostest gentlist i know of)

fill w/ CRISCO and return to stove to fry 3 batches of potatoes(throwing the potatoes away of course)

pour the grease out n wipe as dry as you can

CRISCO doesn't get rancid as easily as some of today's designer lubricants do

folks who use or wipe their iron out w/ designer a/o bargain basement lubricants will face your dilemma on a more regular basis which is a MAJOR PITA :-O

Put it on the grill outside, crank up the heat and burn it all off. Turn off heat and let cool.

Wipe down with organic flaxseed oil. Heat on grill to 350 for an hour. Let cool.

Repeat 5 or 6 times.

Best finish out there.

When storing it with the lid on use a paper towel as a "wick". Fold it so that it like a long candle and put part of the towel into the dutch oven, replace lid, and let the other part hang over the side/outside. Joanie

What does this accomplish and how?

I experienced this a few times and then switched to coconut oil. Since I have made the switch I have not had the problem. For long term storage I get the iron good and warm and apply 100% bees wax inside and out.

Folding a paper towel like a long pencil shape, inserting it into the DO so it touches the bottom, then putting the remainder draping on the outside acts like a wick to absorb moisture when the lid is then replaced. The towel stops the lid from sealing closed tightly and the towel helps to soak up water/excess grease that can accumulate when a DO is stored totally closed.
