Here's the corn casserole recipe (courtesy of Paula Dean):

Ingredients:
1 (15 1/4- oz) can whole kernel corn, drained
1 (14 3/4- pz) can cream-style corn
1 (8-oz) package corn muffin mix (Jiffy recommended)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar cheese

Instructions:
Preheat oven to 350 deg F

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased casserole dish. Bake for 45minutes, or until golden brown. Remove from oven and top with cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for a least 5 minutes and then serve warm.

My personal suggestion for crock pot or maybe dutch oven is to use half the amount of butter. Won't turn out as soupy, and set up better. Regardless the taste is still great.

I will be out as long as the water in my tank doesn't freeze. Went to Loud Thunder Park in Rock Island County (IL) last weekend. I am thinking about Grant River RA on the Mississippi
