I cant decide what to bring for potluck either. You may get just that.....POTLUCK!!!!!!! :)

We are looking forward to this weekend as well. Can hardly wait. Have the CASHCOW all loaded up and ready.

Ed, is there anything else you can think of that we need to bring? we can throw in our 6 ft table as well if you think we will need it.

anyone have any special requests for potluck, you better speak up now. I wanted to make campfire cobbler,but that will be a little hard to do without a campfire or coals......

...well went to the store last nite and came home with the makin's for Marlene's World Famous Vegatable Beef Soup...this stuff is killer and you 'bout can use a fork to eat it with...will bring bowls and spoons as well...unfortunately, just got no way to do up some cornbread...darnit........

Corn muffins will last a few days Jack. You can also make em waffles or like pancakes. :twisted: Man I wish I could do this one..........

Madjack: you'll be 15 minutes from a United Supermarket in Canyon, Texas.
They carry everything you need for making cornbread (corn meal, flour, eggs, buttermilk, salt, baking powder, and Reynolds Wrap). They also sell a really nice line of cornbread, with or without jalapenos.

If you're not camping in a site with electricity, (if you are, either your toaster oven or crockpot from home are a great way to bake) you can make cornbread just fine in a Dutch oven. You can also fake it: On a Coleman stove, there are a couple options. One is a Coleman folding oven. The other is a reflector oven.

If the sun's out at Palo Duro you can bake cornbread in a solar oven pretty easily.

Fresh donuts for breakfast

Dave and I will be there early Saturday morning with fresh donuts. We couldn't figure out how to get there by 10:00 so got a room at a motel for Friday night.

Also, the Bluebonnet isn't going to make it. She is still kind of nekkid :o

Like Miriam said, cornbread can be cooked in a skillet like pancakes. It's a llittle different, but not bad. You should know this Jack! It's unique to the American South. Here's wikpedia's definition

Hot water cornbread.
Cooked on a rangetop, one frying method involves pouring a small amount of liquid batter made with boiling water and self-rising cornmeal (cornmeal with soda or some other chemical leavener added) into a skillet of hot oil, and allowing the crust to turn golden and crunchy while the center of the batter cooks into a crumbly, mushy bread. These small (3-4" diameter) fried breads are soft and very rich. Sometimes, to ensure the consistency of the bread, a small amount of wheat flour is added to the batter. This type of cornbread is often known as "hot water" or "scald meal" cornbread and is unique to the American South.

Skillet cornbread rocks.

Alton Brown and Emeril Lagasse both give really good cornbread recipes:

If you have one of those folding omelet pans, make up a batch of cornbread and pour it in one half. Set it over the burner until it pulls away from the (you did grease the pan first, right?) side a little or starts to show bubbles in the top edge like pancakes do as they get done on the bottom, then close and flip the pan to brown the top.

My mom used to do this so as not to heat the house up further with the oven in the summer.

If you lack said omelet pan, you can make the cornbread in a skillet anyway.

...I've indeed made cornbread inna skillet...it's the only way my mother made cb...however, I usually end up burning at least one side or the other so I will take a pass on cooking cb for this gathering........
