This is a great trick for camping, too. I've put pork chops or chicken into a brine with ice and then packed it in a small lunchbox sized cooler. It makes the chops or chicken tasty and moist when putting on the grill or cooking in the dutch oven. And the brine, since it's salt water, keeps things cooler longer.
A quick cheat is to make homemade ice cream while camping, then dumping the meat into the salt water the ice cream was made in. Add some sugar and your favorite spices and you have a simple easy brine. If the meat was frozen when you threw it in the brine, it will be ready for lunch the next day. And since salt keeps things preserved, adding a little ice and your meat won't spoil. I ended up doing this on a trip when we lost all of our refrigeration. Worked like a charm.
