Pumpkin Pecan Crisp Recipe Request

At the LCG, during one of the group feeds someone served what I thought was Pumpkin Pecan Crisp, prepared in a dutch oven.

Well, it was so tasty, I hoping that the Chef wouldn't mind sharing the recipe.

While I'm not the guilty person and this isn't a DO recipe, it's the only one I found, maybe you could adapt to DO?

Well I was not at the LCG, but I have made this recipe several times and it is quite good.

Almost Pumpkin Pie

Filling:

(1) 29 oz. can pumpkin
1 tbsp. pumpkin pie spice
3 eggs
1 Cup sugar
1/2 tsp. salt
1 tsp. vanilla
1 cup evaporated milk

Topping:
1 Pkg. yellow cake mix
1 Cup chopped pecans
1 Cup butter

Mix all filling ingredients. Pour into a greased 12" DO.
Cut butter into cake mix with a pastry blender, then mix in nuts. Sprinkle over top of filling.
Bake for 1 hour with 8 charcoal on the bottom and 16 on top.
Dessert is done when a knife inserted in the center comes out clean.
Serve warm or cold.

I fixed the Pumpkin Crisp Dutch Oven at LCG .. and would be glad to share the receipe ... its pretty much the same as Barbara's.

1 can pumpking (about 16 oz)
8 oz evaporated milk
1 cup sugar
1 tsp vanilla extract
1/2 tsp pumpkin pie spice (or cinnamon if other is not available)

1 box yellow cake mix
1/2 cup chopped pecans
1 stick butter or margarine

Mix the first 5 ingredients, then pour into lightly greased 12 inch D.O.
Sprinkle cake mix evenly over mixture. Sprinkle pecans evenly over cake mix. Drizzle melted butter over mixture.

Bake for about 1 hour or until lightly browned on top. Could cook in a 350 degree oven or over charchoal (10 on bottom and 14 on top).

But you can send some of that dessert up Highway 287 when you git r' dun!!!! :lol:

No worries Kevin, I bet there will be another chance. Never know when a road trip up 287 may be in order.

I did give it a try this past weekend, it was the first thing I ever made in a dutch oven.

Which recipe did you follow? Trudy's looks simpler.

Also how deep did it end up. I'm thinking of doing it in my 10" D.O. Do you think the full recipe would be too much?

Jim,

I did follow Trudy's, and I did use a 10" dutch oven. Work great. Maybe 3" deep or so. Cooked it about an hour, tried to estimate about 350, I had 7 or 8 coals on the bottom, and about 14 or 15 on top. (I followed what the Lodge "cheat sheet" shows for 350)

Thanks Earl. The recipe seemed familiar. I just realized that our camping neighbors made it for a potluck last month. I'm going to try it next week for a Tuesday pre-pre-T-day dessert.
