Poor Man's Casserole

This is a dish that we have at home every now and then. I'm thinking this would also do well in a DO.

Take a half a cabbage and chop it up, lay in the bottom of a casserole dish. add a little water just to cover the bottom.
Add one can of cream of celery soup, cream of chicken works good too.
Add one can of corned beef on top of that.
Next mix up one box of Jiffy corn bread mix and pour that on top to cover everything.
I'm not exactly sure on how long to cook it, when it looks a golden brown color on top. :)

I tried it about a week ago and thought I posted a pic. Perhaps I didn't hit "submit" after I previewed it. Regardless, here it is . . .

I used cream of celery soup as recommended. As far as cooking time, I simply followed the corn bread baking instructions to the letter. Furthermore, I let it stand for a full ten minutes to allow the cabbage to bake a little more on the bottom. I was pleasantly surprised at the result. Thanks again for posting the recipe!

Did you mean corned beef hash, or the stuff that's kind of like Spam?

I guess you could say it kinda looks like the Spam cans. just plain corned beef, not the hash that has little potato pieces in it.

I'm not a fan of corned beef (and meat from a can kind of squicks me out), but the dish is intriguing. Got any suggestions for a different meat to use?

Although I personally feel that corned beef is an important ingredient with this dish, you could use precooked loose sausage or bacon. A half pound of one or the other would work fine.

Well I went ahead and bought a DO. :D
I thought I would try out this recipe as the first dish
cooked in it. I added one carrot and a dash of onion and garlic powder
this time. Turned out great! :R

Tried that recipe but I made a few changes. Used hamburger instead of corn beef. Added some onions and green peppers. And I used mexican style corn bread. I used one package of corn bread mix, next time I'll use two. One package didn't compleatly cover the top.
